Pineapple Fresh Cream Cake

The best part about birthdays is CAKES! And if you love baking, you always want to make a special cake for your loved ones. So for my dad’s birthday this year, I decided to bake him a fresh cream pineapple cake. It turned out to be soft, moist and absolutely gorgeous. This is a no hassle recipe, especially if you have made basic sponge cake before.


Prep Time: 10 mins l Cook Time: 35 mins l Total Time: 45 mins

Makes a 1 kg birthday cake




For the cake:


All purpose flour – 250 gms

Salted butter – 250 gms

Powdered sugar – 200 gms

Eggs – 4

Baking Powder – 2 teaspoon

Baking Soda – 1 teaspoon


For the frosting:


Sweetened whipping cream – 3 cups

Canned pineapple – 2-3 slices


For the Garnish


Canned pineapple – 2-3 slices

Canned cherries – 10-12 (for garnish)




For the cake


  1. Preheat your oven at 180 degrees Celsius
  2. Sift all the dry ingredients – All purpose flour, baking soda and baking powder in a bowl
  3. In a separate large bowl, add butter and sugar and beat until light and airy
  4. To this mixture, add the eggs one at a time making sure each egg is completely incorporated before you add the next one
  5. Add the vanilla extract and mix well
  6. Pour this mixture into a greased container and place it in the oven for 30 minutes
  7. Keep checking with a toothpick until it comes out clean.
  8. Once done, take it out of the oven and let it cool completely
  9. Cut the cake horizontally into two halves. Gently inject/pour, pineapple juice from the tin into both halves of the sponge cake until it is nice and moist.


For the frosting


  1. Beat the whipping cream until firm peaks form.
  2. Keep half the mixture aside and add finely chopped pineapple pieces to the cream
  3. Spread generous quantities of this mixture onto the lower half of the cake.
  4. Now place the other half of the sponge cake onto this and add the remaining whipped cream all over the cake.
  5. Spread evenly with a spatula

For the Garnish

Garnish with pieces of pineapple and cherries or as desired.





  1. Make sure your basic sponge cake is soft, airy and light, so you get a nice and fluffy texture to your cake.
  2. The pineapple pieces can be cut into any size depending on the bite you desire
  3. De-seed the cherries for a better experience
  4. You can also use white chocolate to garnish
  5. You can add small bits of pineapple to the batter before baking as well.
